A Thai-Chinese Feast with Palisa Anderson and Sungeun Mo

Inspired by Rice Porridge Shop - Palisa and Sungeun Mo will dive into this dynamic cooking style to deliver a bowl of house made congee and a progressive, three-drop selection of accompanying dishes.

Palisa Anderson of Sydney’s Chat Thai is stepping into the kitchen at BKK with chef Sungeun Mo to explore the world Thai Chinese cuisine, with a feast inspired by Palisa’s late mother, Amy Chanta, and her Thai-Chinese heritage.

Together Palisa and Mo will delve into this dynamic cooking style, drawing inspiration from a specific style of shopfront restaurant in Thailand called raarn khao gtom, which translates to “Thai rice porridge shop” or “congee shop”.

You’ll enjoy a bowl of congee served alongside a progressive three-drop selection of 12 side dishes. Expect to see the likes of triple-cooked pork belly; a warm salad of oysters, mussels and clams; stir-fried bitter melon and egg; lobster with salted egg yolk; braised pork knuckle and blood jelly pahlo; and stir-fried chayote tips and calamari with green chilli and lime. Freshly harvested produce from Palisa’s certified organic farm, Boon Luck, will be a feature.

It’s a feast of flavour, and an adventure for anyone interested in the nuances of the food culture in Thailand.
